I started a 6 week weight loss challenge at my local gym last week. I am trying to lose the rest of the baby weight that has accumulated over the past few years, and so far I am sticking with it. The only issue I’m having is that I am a serious food lover. Maybe it runs in my Italian blood haha 🙂
Tonight I was craving something delicious. I needed something with flavor and substance, and I didn’t want to wreck my diet. So, I had some zucchini in the fridge and I decided to turn it into spaghetti…but without the carbs – hence, faux-ghetti.
This recipe is super duper easy. Here’s what you’ll need:
vegetable peeler
2 medium sized zucchini’s
tomato sauce
garlic powder and pepper (to taste)
Optional: grated parmesan cheese
First, use your vegetable peeler to thinly slice the zucchini into a bowl.
Then, season with garlic powder and pepper to taste, and toss in a tablespoon of olive/coconut/your favorite healthy oil. Pop into the microwave for 2.5 – 3 minutes. If you don’t like the microwave, you could easily sautee the zucchini in a pan quickly, too.
Once the zucchini is soft, remove from microwave (or pan) and pour tomato sauce on top. I literally poured it straight from a can. For more civilized folks, who like measurements, I used about 1/2 cup of sauce.
I love cheese, so I sprinkled some grated parmesan on top for additional flavor. Leave off if cheese isn’t on your diet…the garlic powder, pepper, and tomato sauce should be a good amount of flavor without the cheese.
This came out totally heavenly! I loved every single bite, and I have 2 more zucchinis in the fridge so I can do it again tomorrow!
