I have a really big weakness for comfort food. I know, who doesn’t, right?!
Even though I went on a ridiculously hard extreme weight loss journey last year (and lost nearly 100 pounds in 9 months – click here to read the whole story), I still love to treat myself to delicious food that makes me feel warm and happy inside! I also love to cook delicious stuff for my family…
I recently made this amazing, heavenly, fluffy banana bread…with blueberries thrown in the mix, and it really is the best thing ever. It takes like slices of heaven. I actually baked it for my 91 year old Grandma, who has been in-and-out of the hospital lately for various health issues. I wanted her to have homemade food to comfort her soul and make her feel extra loved. She is my only living grandparent, and at her age she certainly needs (and deserves!) some TLC.
She loved this banana blueberry bread. She told me that she was surprised it came out so good because she thought that I didn’t even know how to cook. (Her sense of humor is apparently still in tact!)
Inevitably, I ended up scarfing down a few slices. What’s funny is that I don’t even like bananas! But, this banana bread is like a dream cake.
I made it again last night for my little boys to eat this morning, and they can’t get enough of it!

Ok, here’s what you’ll need:
Banana Bread Recipe
– 4 medium/large very ripe bananas (mashed)
– 1/2 cup blueberries (halved)
– 1 stick of butter (softened)
– 1 1/4 cups sugar
– 2 eggs
– 2 1/2 cups all purpose flour
– 1/2 cup milk
– 1 teaspoon vanilla extract
– 1 teaspoon baking soda
– 1 teaspoon salt
First, heat your oven to 350 degrees. Then, in a large mixing bowl add together the butter and sugar. (The first time I made this I used a spoon and elbow grease to mix the ingredients. The second time I made it I used my KitchenAid Stand Mixer. Both times it came out delicious!)
Then, add in the bananas, blueberries, vanilla, and milk. Mix well.
Lastly, add in the rest of the ingredients (flour and baking soda) and mix until everything is just blended (but not to a smooth consistency.)
Pour the mixture into a greased pan. I didn’t have a bread loaf pan, so I just some old school Corningware that I “borrowed” from my mom.
Pop that baby into the oven for about an hour and 15 minutes. The top will get golden brown and you’ll know it’s done when a knife or toothpick comes out clean from the center of the bread.
When its done, let it cool for a while…At least an hour before slicing. The loaf I made last night actually cooled until this morning, and it tasted amazing!
