On school mornings in my home you can usually find me in the kitchen, doing about 50 different tasks at one time. I’m brewing coffee, passing food out to the kids, packing their snacks for school, and tripping over our dogs while simultaneously trying to find matching socks for the boys.
I wish I was one of those moms who had it all together. The ones who pack the kids snacks and lay out their clothes for school (with matching socks) the night before. Not 20 minutes before needing to get in the car.
That’s just part of my charm I guess (ha), and that’s why you’ll find me chopping apples like a mad woman so my kids have something decent and fresh to eat at school. One morning recently, while I was chopping up their apples, I decided to chop up a few more and throw them in my oatmeal. They smelled so good, and I couldn’t resist!
With a few spices, and some almond milk, it was basically like turning my normal bowl of Quaker® Oats into a heaping bowl of hot apple pie! YUM!
I love how this apple pie oatmeal came out, and I think you’ll love it too. The next time you’re packing snacks for your kiddos, take a few of their apples and make yourself a real treat for breakfast!
Here’s what you’ll need to recreate this apple pie oatmeal recipe:
Apple Pie Oatmeal Recipe
INGREDIENTS
1/2 cup Quaker® oats
1 cup chopped apples (approximately 1 small apple)
1 cup unsweetened almond milk
1/2 cup water
1/2 teaspoon apple pie spice
(optional after cooking: top with honey or sugar to taste, and/or chopped nuts)
INSTRUCTIONS
1. In a saucepan over medium heat, add together Quaker® oats, apples, almond milk, water, and apple pie spice. Stir together until evenly distributed in the pot.
2. Bring the mixture to a boil. Then, lower the heat and simmer until fully cooked (approximately 5 minutes).
3. Remove the pot from the stovetop. Transfer the Apple Pie Oatmeal into a bowl and enjoy your delicious breakfast! Don’t forget to sprinkle on your choice of toppings such as: honey, chopped nuts, sugar, or whatever your heart desires!
