The first week of the January is over, can you believe it?! Social media is ablaze with everyone sharing their New Year’s resolutions, with diet and weight loss plans seemingly in full swing right now! I can’t deny that I’ve jumped on the bandwagon, and have been trying my best to workout and be in better health. (I hope the slice of pizza I ate at a birthday party earlier doesn’t count?! Balance, right?)
But, I also can’t deny that I’m also trying to mostly stick to a clean eating plan (sort of – minus the pizza), and this mushroom garlic quinoa recipe is a great go-to recipe to make over-and-over again. It’s a great side dish idea for weeknight dinners, or it can even be eaten by itself – it’s that tasty!
Quinoa is full of a TON of nutrients and health benefits, so it’s really a beneficial food to include in your diet, if you’re not already. It’s full of protein, fiber, and it’s naturally gluten free, too!
Truth: Quinoa can be kind of bland on it’s own. So this mushroom garlic quinoa recipe punches up the flavor, and really takes the plain ol’ quinoa to another flavor level of deliciousness…
This quinoa recipe is pretty easy to make, and it’s packed with delicious flavors. Definitely add this to your meal plan this week.
