With the school year back in session, life has been getting super busy around here, as I’m sure it is for you, too! This time of the year is just the beginning of the busyness, though! It’s time to get ready to catapult into the upcoming fall festivities and holiday season right around the corner, too!
When life is hectic, meal planning and answering the age old question of “what’s for dinner?” is sometimes hard. I feel like we are always eating the same few things in a bland and boring rotation. So, I decided that I would change up our dinner routine a bit, and add in some fresh, fast, and easy meals.
This Veggie-Loaded Tuna Stuffed Tomatoes recipe is not only fast and easy to make, but it’s healthy, too! It combines fresh vegetables, protein of delicious Bumble Bee® Solid White Albacore Tuna, healthy fat and important vitamins and minerals. This is a simple weeknight dinner that the whole family will enjoy!
Ready to get dinner going? Here’s what you’ll need to make this delicious and super easy meal:
Tuna Stuffed Tomatoes Recipe
1/4 cup carrots (chopped)
1/4 cup celery (chopped)
1/4 cup yellow onion (chopped)
1/2 cup mayonnaise
2 large beefsteak tomatoes
First, put chopped veggies (carrots, celery, onion) into an electric food chopper, and chop for a few seconds until the veggies are well blended together. (Do not liquefy them, only chop.)
Then, add together in a large mixing bowl the veggies, mayo, and tuna. Mix together until tuna is well coated in mixture.
Now, using a sharp knife, hollow out the beefsteak tomatoes. You’ll want to make a circular cut around the stem, and remove it. Then, make 8 symmetrical cuts (or as few/many as you’d like!) around the tomato.
Next, stuff the sliced tomato with the tuna mixture.
Serve on a bed of lettuce, or with some crackers. Use the tomato slices to scoop the tuna…or, simply dig in with a fork and enjoy your fresh and fast tuna dinner!
