My husband and I are both of Italian descent. We both grew up eating large Sunday suppers…dinners that included tons of our favorite dishes like homemade spaghetti and meatballs, chicken parmigiana, and often times chicken cacciatore. Our families can COOK. Thankfully, I inherited the cooking gene from my grandfather, and my parents. My mother in law is an amazing Italian cook, but my husband, eh…not so much! (Shhh, don’t tell him I said that.)
I’ve been flexing my cooking muscles, and making this skillet chicken cacciatore recipe for the man of my dreams since way before we were married. When we were dating and engaged to be married, it was a meal that he often requested for special occasions. In fact, he may have married me because of this very recipe. Haha…I’m mostly joking, but this recipe is really that good!
This recipe is the perfect Sunday dinner or really, any night you want to enjoy a heavenly homemade meal. It’s loaded with savory, delectable flavors and tons of colorful veggies. (By the way, I picked up nearly all of the ingredients for this recipe on a recent trip to Walmart – including the sauce and produce!)
Ready to get this meal going in your skillet?? Here’s what you’ll need to get started…
Skillet Chicken Cacciatore Recipe
For the chicken–
– 4 boneless skinless chicken breasts (thin sliced)
– 1 clove garlic (minced)
– 1/4 tsp parsley
– 1/4 tsp salt and pepper (or to taste)
For the sauce-
– 2 tbsp olive oil
– 1/2 yellow onion (sliced)
– 2 cups sliced bell peppers (red, orange, yellow – your choice!)
– 1 cup sliced baby bella mushrooms
– 1/2 cup chopped tomato
– 1/2 cup fresh basil (chopped)
– 1/4 cup butter
– 1/3 cup white wine or white zinfandel
– 1 1/4 cups Prego Farmers’ Market® Classic Marinara
– grated parmesan cheese for sprinkling on top of finished dish
First, coat chicken breasts with garlic, parsley, salt and pepper.
Next, coat a large skillet with olive oil and heat over medium high heat. Add chicken into the skillet and cook for about 5 minutes per side. You’ll want to get a slight brown color on each side of the chicken breasts, but they won’t be thoroughly cooked. Remove from skillet and set aside.
Retain the cooking oil and juices in the pan from the chicken, and add in all veggies and butter to the skillet. Sauté for a few minutes until onions look clear and vegetables start to soften. Now, add in wine and allow the liquid to simmer for a minute.
Next, add in the Prego Farmers’ Market® Classic Marinara sauce, and stir to combine sauce and skillet ingredients. I really like this particular sauce because it’s made with the kind of ingredients that you would find at your local farmers’ market that are picked at the peak, like vine-ripened tomatoes, garlic, and basil…YUM!
Next, return chicken breasts to the skillet. Lightly cover them in some of the sauce and veggies.
Then, cover the skillet and cook for another (approx.) 15 minutes, or until the chicken is thoroughly cooked.
Serve over your favorite pasta and with a generous helping of grated parmesan cheese.
