School is back in session and my boys are having a blast so far. I’m so happy and proud of them. They hop out of the car in the morning and happily make their way into their school. This is a really big difference than how it went last year (hint: there was a lot of tears!)
Since they’re back in school it’s time for me to be back on my meal prep and dinner game. I love delicious, quick, and easy meals that our whole family can enjoy together on weeknights. I also have a love of my Instant Pot. That thing is magical, and somehow makes the most delicious food in no time!
This time is no exception. The Instant Pot has created another seriously flavorful meal that my kiddos loved and my husband requested that I make again really soon!
I love using French’s Tomato Ketchup for this recipe because it has the taste of U.S. farm-grown tomatoes free from high fructose corn syrup, preservatives, artificial flavors & colors and gluten! It really adds something to the flavor of this dish as it melds together with the other ingredients. While we’re on the topic of ingredients, the bourbon in this dish is bold and the alcohol is reduced by the cooking process, just like cooking with wine.
Honey Bourbon Chicken – Instant Pot Recipe
The secret to this recipe is the sauce. Yes, it’s a secret sauce…but I’m letting you have the secret today 🙂
Here’s what you’ll need to whip up this Instant Pot Honey Bourbon Chicken in your magical pressure cooker:
– 1lb boneless skinless chicken breasts
– 1/2 yellow onion (chopped)
FOR THE SAUCE:
– 1/4 cup French’s Tomato Ketchup
– 1/4 cup bourbon
– 1/4 cup brown sugar
– 1/4 cup soy sauce
– 1 1/2 tablespoons honey
– 1/4 cup water
– 1/2 tsp garlic powder
– 1/2 tsp red pepper flakes (use less if you’re sensitive to spice)
– dash salt and pepper
– 2 tablespoons cornstarch
– 1 tablespoon water
Place raw chicken and chopped onions into the bottom of the pressure cooker.
Combine all ingredients for the sauce (except cornstarch and 1tbsp water) in a bowl and whisk together until well combined.
Pour into the pressure cooker over the top of the chicken and onions. Put the lid on and cook on manual for 15 minutes.
Let the pressure out and carefully remove the lid. Remove the chicken and shred with two forks. Return the chicken into the sauce and set the Instant Pot to the Saute setting. Now mix in cornstarch and 1 tbsp water until sauce is thickened (approximately 2 minutes).
Serve over white or brown rice with fresh green onions for garnish. Enjoy this easy and delicious meal that your whole family will love!
