Over the last month or so I’ve been making it a priority to get back into the groove of healthy eating. I’m trying to finally lose the baby weight from our youngest son. To reach my goal, I’m choosing foods that are higher in protein and lower in carbohydrates. When you’re trying to eat healthy it can sometimes get a bit boring to eat the same meals over and over. I like to keep things fresh and interesting. With meals like these Thai style sweet and spicy chicken lettuce wraps, my tastebuds have been truly happy!
This recipe uses the awesome Mighty Spark Food Co. Sweet Thai Style ground blend. Mighty Spark Food Co. products have flavors and spices added to them, it makes the preparation work very easy – it’s an easy weeknight meal that takes less than 20 minutes to make! The end result is a meal PACKED with flavor and it’s super healthy, too!

Ready to get cookin’? Here’s what you’ll need to make the absolute BEST lettuce wraps and homemade sauce you’ve ever had!
Thai Style Sweet & Spicy Chicken Lettuce Wraps
For the sauce:
– 1 tsp ginger
– 3 cloves minced garlice
– 6 tbsp low sodium soy sauce
– 2 tsbp rice vinegar
– 3 tbsp honey
– 2 tbsp water
– 2 tsp cornstarch
For the lettuce wraps:
– 1 tbsp olive oil
– 1 red pepper (diced)
– 1 yellow onion (diced)
– 1 package Mighty Spark Food Co. Sweet Thai Style Chicken Ground Blend
– green onions (chopped)
– lettuce leaves for wrapping
First, mix together all ingredients for the sauce and set aside.
Next, add olive oil, diced red pepper, and onion to a large frying pan. Begin to saute until vegetables soften a bit. Then, add ground chicken blend into the pan and crumble into the veggies. Continuously stir the meat and veggies so they cook evenly. Cook according to package directions, until chicken is thoroughly cooked.
Once the flying pan chicken mix has finished cooking and cooled a little, spoon mixture into lettuce leaves. Top with chopped green onions. Spoon sauce on top and ENJOY!!
