Instant Pot Pulled Pork Tacos Recipe
Here’s what you’ll need to get started:
INGREDIENTS:
For the Instant Pot:
– 2 pounds boneless pork (loin or shoulder)
– 1 cup distilled white vinegar
– 2 tablespoons ketchup
– 1 tsp cayenne pepper
– 2 garlic cloves, minced (or 2 tsp garlic powder)
– 1/2 tsp salt
For the rub:
– 1 tbsp salt
– 1 tbsp Hungarian paprika
– 2 tsp garlic powder
– 2 tsp onion powder
– 1 tsp black pepper
– 1/2 tsp cayenne pepper
For the taco secret sauce:
– 1/2 tsp garlic powder
– 1/2 tsp onion powder
– 1/4 cup honey
– 1 1/4 cup ketchup
– 1 tsp mustard
– 4 tbsp apple cider vinegar
– 1 tbsp worcestershire sauce
– 3/4 cup brown sugar
– 1/8 tsp cayenne pepper
– 1 tsp salt
For the tacos:
– tacos shells (hard or soft, you pick!)
– 1/2 onion (diced)
– coleslaw (as little or as much as you want)
– feta cheese (as little or as much as you want)
INSTRUCTIONS:
First, add pork loin to a gallon size zip top bag and add in all ingredients for the rub. You’ll want to let the meat marinate with the seasoning rub on for at least 45 minutes – 1 hour, depending on how quickly you need dinner on the table.
When the meat is ready, transfer the pork loin to the Instant Pot. Add in the ingredients above in the “for the Instant Pot” section.
Set your pressure cooker to 45 minutes on manual.
When it’s done cooking, remove the meat from the Instant Pot and shred with two forks. Spoon some of the liquid from inside of the Instant Pot on top of the shredded pork.
You could totally serve this delicious pulled pork as it’s own meal. But not us, we are makin’ tacos!
So, add some pulled pork to a taco shell (hard or soft – totally up to you!), spoon on some of the taco secret sauce, and top with a bit of feta cheese, diced onions, and cole slaw.
