One of my favorite ways to eat apples is this refreshing apple coleslaw recipe. It’s a fun and sweet twist on a classic coleslaw recipe. It’s infused with delicious flavors and they combine to make a party on your tastebuds.
The hero of this recipe is the Envy Apple that serves up a big crunch and texture, and cool refreshing sweetness.
This coleslaw recipe can be served alone as an appetizer, as a side dish, or on top of your favorite sandwich to kick the flavor up 10 notches. I LOVE putting this on a chicken salad sandwich. Apple, Cranberry, Walnut Slaw Recipe
2 large ENVY APPLES (chopped)
6 c. Shredded cabbage (or 1 small cabbage)
1 c. matchstick carrots
3/4 c. dried cranberries
3/4 c. walnuts (chopped)
3/4 c. plain (unsweetened) Greek yogurt
1/4 c. mayonnaise
1 tbsp. fresh squeezed lemon juice
2 tsp. apple cider vinegar
1 tsp. raw organic honey
Salt and pepper to taste
- In a mixing bowl whisk together Greek yogurt, mayonnaise, honey and apple cider vinegar until smooth. Season with salt and pepper to taste.
- In a large bowl toss together cabbage, carrots, chopped ENVY apples, almonds and cranberries.
- Pour dressing over cabbage mixture and toss to evenly coat. Let the coleslaw mixture rest for about 5 minutes, then serve immediately for best results.
Serve on top of your favorite sandwich and ENJOY!
