Easy Instant Pot Jambalaya Recipe – one pot meal filled with veggies, rice, shrimp, and sausage
As far back as I can remember from when I started dating my husband, he has always ordered Jambalaya at a restaurant whenever it is on the menu! Jambalaya is one of his favorite meals. What is Jambalaya?
This easy jambalaya recipe is a simple cajun inspired one pot meal that’s jam-packed with veggies, rice, shrimp, and sausage. Jambalaya is a dish popular in the South East United States, most notably Louisiana. Jambalaya has influences of Spanish, French, African, Native American and Caribbean cooking styles and produce. Perhaps the most obvious of these is Spanish, due to the dish’s similarity to paella, which was brought to New Orleans by foreign explorers. Jambalaya is a filling but cheap meal that’s loaded with flavor, and it’s easy to see why it’s such a popular dish!

The Instant Pot is a new spin on an old pressure cooker. Using my Instant Pot is one of my absolute favorite ways to make a meal. It’s much quicker than traditional cooking methods and in my opinion it makes the flavors of the food much better! I love it so much that I actually own more than one!

Easy Instant Pot Jamba
laya Recipe
Here’s what you’ll need:
INGREDIENTS
– 1lb peeled and cooked shrimp
– 2tbsp cajun seasoning (more to taste)
1 tbsp olive oil
– 8 ounces andouille sausage (sliced into bite sized pieces)
– 1 yellow onion (chopped)
– 1 green pepper (chopped)
– 1 red pepper (chopped)
– 1 1/2 cup rice
– 1 6oz can tomato paste
– 2 cups
chicken broth
INSTRUCTIONS
– In a large bowl, sprinkle shrimp with cajun seasoning and set aside.
– Pour olive oil into Instant Pot and add chopped veggies (onion and peppers). Cook on the saute function until onions are translucent (about 5 minutes).
– Next, turn off the Instant Pot. Add in sausage, tomato paste, and chicken broth. Stir to combine ingredients.
– Then, pour in the rice. DO NOT STIR. You want to avoid getting a burn notice from the Instant Pot, so letting the rice sit on top of the other ingredients is best.
– Set Instant Pot to manual high pressure for 15 minutes. Then, when it’s done cooking let the pressure naturally release for 5 minutes.
– Open the Instant Pot lid and give everything a good stir. Then, add in the shrimp and stir together again.
– Allow the meal to rest for another 5 minutes. Taste, and add some salt and pepper to taste.
